What is winter durum wheat?
- The smallest class of wheat in the US and primarily used to make different pasta products due to it’s large seed size, kernel hardness, and protein quality.
- Currently US durum production is a spring type of durum grown primarily in North Dakota and Montana, but KSU breeders have developed a winter type of durum.
- Production practices are very similar to common hard red or white winter wheat varieties grown in the southern plains.
- Offers a crop alternative for rotational considerations and prices at a premium to common winter wheats, executed through local grain operators.
- The initial building of the market is being done in a closed loop, identity preserved supply chain with support of a pasta company.
